INGREDIENTS
1-1/2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
10 tablespoons cold unsalted butter
4 tablespoons 2% milk
1 large egg yolk, room temperature
FILLING:
1 pound medium peaches, peeled and cut into 1/2-inch slices (about 3 cups)
2 cups fresh or frozen blueberries
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 large egg, beaten
2 tablespoons demerara sugar
Blueberry ice cream, optional
