"You hear or read the name "Pavlova" and you instantly think it's a Russian dessert. Actually, it was a dessert created in New Zealand (although Australia wants to lay claim) and named after a late 1800's Russian Ballerina, Anna Pavlova. A pavlova is similar to dried meringues. The only difference is that it's not entirely crunchy, it's got a gooey center. I'm sure you could serve it all by itself, but I prefer mine topped with whipped cream and berries.
