INGREDIENTS

1 lb short, chunky dry pasta (I usually use farfalle, but any shape will do)
•
3 T unsalted butter
•
3 T unbleached all-purpose flour
•
1 lemon, juice and zest
•
1 cup whole milk
•
½ cup heavy cream
•
1 6 oz. can salmon, drained, skin and bones removed
•
sea salt and freshly ground pepper
•
snipped scallions or chives, about ½ cup
•
(Optional: 1 cup peas or short lengths of blanched asparagus)
