INGREDIENTS
For the salad:
1 lb. pasta, (your choice, I used Rotini) cooked, drained, and cooled
2 cups fresh baby spinach, chopped
1 large cucumber, peeled, seeded, and diced
1 lb. cherry or grape tomatoes, cut in halves or quarters depending on size
2 green onions, thinly sliced
1/4 cup finely diced red onion
2 medium carrots, grated
1/2 cup (packed) fresh basil leaves, chopped
1 tsp. chopped fresh mint
1/2 lb. Feta cheese, cut into bite sized cubes
1/4 cup chopped Kalamata olives (optional)
Salt and freshly ground black pepper
For the dressing:
1/2 cup Greek yogurt, drained
1/2 cup sour cream
1/2 cup olive oil
3 tbsp. balsamic vinegar
2 tsp. dill pickle relish
1 tsp. sugar
