INGREDIENTS
1 cup ditalini pasta
2 Tablespoons olive oil {divided}
1 pound ground beef
3 garlic cloves, minced
1/4 cup onion, chopped
2 large carrots, peeled and chopped
2 celery stalks, chopped
6 cups vegetable broth {you can also use chicken broth}
2-15 oz. cans diced tomatoes
2-15 oz. cans cannellini beans, drained and rinsed
1 bay leaf
1 teaspoon dried basil
1 teaspoon dried oregano
3/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper
1/4 cup fresh parsley, chopped
