INGREDIENTS

2 medium size zucchini, spiral cut (I used the Veggetti)

1/2 C. grape or cherry tomatoes, cut in half
•
1/2 C. shredded parmesan cheese
•
1/2 tsp. red pepper flakes (more if you like is spicy, less if you like it more mild)
•
1 tbs. minced garlic
•
1 tbs. olive oil
•
salt & pepper to taste

Pesto Ingredients -
•
2 C. fresh basil leaves
•
2 tsp. fresh, minced garlic
•
1/4-1/3 C. olive oil
•
2-3 tbs. pine nuts
