1 medium yellow onion, diced (about 1/2 cup)

8 ounces white button mushrooms or baby bella mushrooms, sliced

2 cloves garlic, finely minced

1 3/4 cups low-sodium chicken broth
•
2 tablespoons tomato paste

1 bay leaf

1/4 cup plain yogurt, creme fraiche, or sour cream
