Salad:

1 pound boneless, skinless chicken breasts (about 2 breasts)

1 bag 16 ounce spring mix (about 10 cups)

2 cups sliced strawberries (about half a quart)

1 cup blueberries
•
1 cup canned pineapple wedges in 100% juice
•
1 cup canned no-sugar-added mandarin oranges
•
1/4 cup slivered almonds
•
Strawberry Poppy Seed Dressing:
•
2 cups chopped strawberries
•
1/2 cup white balsamic vinegar (or regular, but the dressing will be darker)
•
1/4 cup canola oil
•
1 tablespoon stevia (or your favorite no-calorie sweetener)
•
1 teaspoon minced garlic
•
1 teaspoon Dijon mustard
•
1/8 teaspoon salt
•
1 tablespoon poppy seeeds
