2 tbsp all-purpose flour

½ cup chicken stock
•
2/3 cup milk
•
½ cup tomato paste
•
¾ cup white wine

3 tbsp sherry

2 tsp Dijon mustard

1 bunch tarragon, picked and chopped

FOR THE BEEF SAUCE

1 shallot, minced

1 cup red wine

2 oz heavy cream

3 cups beef or veal demi-glace (store bought)

2 tbsp sherry vinegar
