"These savory Indian fritters use soft, gluten-free chickpea flour (also known as besan or gram flour) to form a light, flavorful batter. They can be made with a variety of vegetables, but I like the cauliflower-onion combination best of all. If you've only got ground spices, they'll work fine as well, but the whole seeds add a delightful crunch...."

INGREDIENTS
1 1/4 cups chickpea flour
1/2 teaspoon turmeric
1 teaspoon chili powder
1 teaspoon salt
3/4 to 1 cup water
1 teaspoon fennel seeds
2 teaspoons cumin seeds
1 tablespoon coriander seeds
1 fresh green chile, minced (optional)
1/2 cauliflower, broken into small florets
1 small onion, cut into thin half-moons
1/4 cup chopped fresh cilantro
Vegetable or peanut oil for frying
Chutney for serving
