5g fast-action yeast
275g (9 3/4 oz) plain flour
75g (2 1/2 oz) strong bread flour
45g (1 3/4 oz) sugar
1 tsp salt
75g (2 1/2 oz) unsalted butter, softened
1 large free-range egg, beaten, plus extra for glazing
nibbed sugar (pearl sugar), for sprinkling
