1 bunch scallions, sliced into thin rounds

1 red bell pepper, diced small
•
1 teaspoon A Taste of Thai Fish Sauce
•
3 cups cooked, day-old A Taste of Thai Jasmine Rice*
•
2 cups chopped leftover chicken, turkey or beef
•
1-3.25 oz box A Taste of Thai Pad Thai Sauce
•
1/2 cup chopped peanuts
•
1/4 cup chopped cilantro or basil
•
Optional: lime wedges

* Day old rice works better for stir-frys. One cup dry Jasmine Rice makes 3 cups cooked rice.
