1 teaspoon Diamond Crystal kosher salt  (or Red Boat Salt)
1 leek (halved lengthwise and cleaned)
¼ cup Red Boat fish sauce
½ pound sweet onion
½ pound kohlrabi
½ pound carrots
1 pound green cabbage
¼ pound baby bok choy
2 stalks celery
½ teaspoon ground black pepper
2 scallions (thinly sliced (optional))
