1/2 cup warm water (100 to 110 degrees)
4 cups flour
1 1/4 cups sugar, divided
1 teaspoon salt
2 sticks butter, cut up
3 egg yolks, lightly beaten, plus 1 egg yolk, divided
3 egg whites
2 teaspoons plus 1 tablespoon cinnamon, divided
1 1/2 cups chopped toasted hazelnuts, divided
1cup powdered sugar, sifted
1 teaspoon dark rum (optional)
1/4 teaspoon vanilla
