3 teaspoons ginger, ground
3 teaspoons ground black pepper
4 tablespoons mustard such as Dijon mustard (use more if needed)
1 cup sour cream, thick (250 ml, use creme fraiche preferably)
3 tablespoons green peppercorns, drained (the pickled kind)
1 tablespoon tomato ketchup
1/2 teaspoon Tabasco sauce (or other hot sauce)
