INGREDIENTS

a rack of ribs (3-5 pounds)
•
3 tablespoons sucanat or brown sugar
•
1 1/2 tablespoons salt
•
1 tablespoon ground coriander
•
1 tablespoon mustard powder
•
1 tablespoon onion powder
•
1 tablespoon paprika (I'm using sweet here)
•
2 teaspoons garlic powder
•
2 teaspoons black pepper
•
pinch of celery seed (optional, but I like the flavor! It's very strong, so go easy.)
•
1-2 teaspoons cayenne, habanero, chipotle, smoked poblano powder - whatever you have on hand!
•
splash of liquid smoke & 1/2 cup water (optional but awesome!)
