1 large portobello mushroom
1 onion, sliced
1 cup shredded part-skim mozzarella cheese
4 cups liquid egg substitute
1 tsp. baking powder
1 tsp. chopped garlic
1 tsp. Italian seasoning
1/4 tsp. salt
2 cups roughly chopped fresh spinach leaves
1/2 cup roughly chopped fresh basil (or cilantro)
2 firm plum tomatoes
2 Tbs. Parmesan-style grated topping
