INGREDIENTS

2/3 cup uncooked wild rice Sea salt to taste 2 cups water 1/3 pound plain tofu, diced small 1 3/4 tablespoon tamari Vegetable oil spray 1 cup toasted pecan pieces

3/4 cup raisins 3 green onions, sliced (use white and green parts) 1 cup finely diced green bell pepper 3/4 cup wild rice tofu dressing (see recipe) Salt and pepper to taste

For wild rice tofu dressing:

4 tablespoons apple cider vinegar

5 1/2 tablespoons canola oil
•
2 teaspoons sesame oil
•
1 1/4 teaspoons ground coriander
•
2 teaspoons curry powder
•
Pinch of black pepper
•
1 teaspoon sea salt
