INGREDIENTS

1 16oz box of orzo pasta

5 ears of corn, grilled and kernels cut off the cob (or ~2 cups frozen or canned corn)
•
1 pint cherry tomatoes, halved
•
8 oz fresh mozzarella, cubed
•
2 large handfuls of arugula
•
For Cilantro Dressing:
•
1/2 cup extra virgin olive oil
•
4 limes, juiced
•
1/2 cup fresh cilantro
•
2 tablespoons sugar
•
2 cloves garlic
•
1/2 teaspoon cumin
•
2 teaspoons salt
•
1/2 teaspoon ground pepper
