INGREDIENTS
2 tablespoons olive oil
2 tablespoons vegan butter
1 bulb garlic, (minced)
4 cups vegetable stock ((up to 6 cups if needed for more liquid))
2 cups canned coconut milk
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon red pepper flakes, (more or less to taste)
1 pound pappardelle pasta, (uncooked)
½ cup vegan parmesan cheese
2 zest and juice of 2 lemons
1/4 to 1/2 cup fresh parsley, (chopped (more or less to taste))
