INGREDIENTS
8 ounces whole grain spaghetti (or gluten-free pasta of choice)
1 small onion (or 2 shallots), thinly sliced
4 garlic cloves, thinly sliced
3 cups greens, chopped (such as kale, swiss chard, or spinach)
1/2 teaspoon fine sea salt
1/4 teaspoon pepper
3 cups water
8 ounces marinated sun-dried tomatoes, chopped
zest and juice of 1-2 lemons*
crushed red pepper and vegan parmesan for topping (optional)
