One-Pan White Beans and Kale Skillet

INGREDIENTS
1 tbsp extra virgin olive oil (or avocado oil)
1 yellow onion (diced)
1/2 cup sun-dried tomatoes (oil-packed, drained and chopped)
2 cloves garlic (minced)
½ cup white wine (or use vegetable broth)
30 oz Cannellini beans (drained and rinsed)
14 oz fire roasted diced tomatoes (canned)
14 oz artichoke hearts (drained and chopped, or you can leave them whole for presentation)
1 tbsp Italian Spice Blend
2 cups kale (chopped)
salt and pepper (to taste)
Crusty bread (optional, for serving)
