2 Bell Peppers (any color)

1/2 of a medium onion
•
1 pound of extra-lean ground beef
•
1 14.5 oz can of whole tomatoes
•
1 14 oz can of low-sodium chicken broth
•
1 8 oz can of tomato sauce
•
1 teaspoon of kosher salt and pepper to taste
•
1 teaspoon of soy sauce
•
1 cup of long uncooked (extra long grain rice)
•
1 cup of shredded jack cheese
