6 chicken thighs, skin-on and bone-in (approx 1½-2 lbs)
2 tablespoons olive oil
1 tablespoon lemon zest
¼ cup of freshly squeezed lemon juice
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
¼ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil
1 yellow onion, peeled and diced
2 garlic cloves, peeled and minced
2 cups baby spinach, lightly packed and roughly chopped
1½ cups long grain white rice or long grain par boiled
3 cups chicken stock/chicken broth
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon dried oregano
