INGREDIENTS
2 tbsp olive oil
2 tbsp (1 oz) unsalted butter, divided
1½ lb. baby potatoes, quartered
1 lb. Brussels sprouts, rinsed, ends trimmed, bruised outer leaves removed, and cut lengthwise
1 medium onion, chopped
2 garlic cloves, minced
1 cup heavy cream
1 cup (3 oz) jalapeño Monterey Jack cheese, shredded (or melty cheese of your choice)
¾ cup Panko breadcrumbs (or regular breadcrumbs)
¼ cup fresh parsley, chopped
Salt and pepper, to taste
