Olive Salad for Muffaletta

INGREDIENTS
1 cup Castelvetrano olives, chopped
1/2 cup Kalamata olives, chopped
1 cup pickled veggies (giardiniera: cauliflower, carrots, celery), finely chopped
1/2 cup peperoncini, sliced
1 tablespoon capers
2 tablespoons shallots
3/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh oregano, chopped
1/16 teaspoon fresh thyme leaves
1 1/2 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
