For a simply delicious variation from the powdered sugar topping, whip 1 cup of whipping cream with 1 teaspoon brandy. Serve this brandy flavored cream atop your cake.

Ingredients

  • 3 C. All purpose flour
  • 2 C. Sugar
  • 1 Tbsp. Baking powder
  • 1 1/2 C. Milk
  • 1/2 C. Butter (or margarine) softened
  • 1 1/2 tsp. Vanilla
  • 2 Eggs
  • 1 C. Apricot (or strawberry, spreadable fruit or preserves)
  • Powdered sugar

How To Make old fashioned yellow cake

  • Step 1
    Grease and lightly flour two 9 x 1 1/2 inch round baking pans. Set aside. In a large mixing bowl stir together flour, sugar, and baking powder. Add milk, butter (or margarine), and vanilla. Beat with an electric mixer on low to medium speed for about 30 seconds or until combined. Then beat on medium to high speed for 2 minutes, scraping sides of bowl occasionally. Add eggs and beat for 2 minutes more. Pour batter into the prepared pans. Bake in a 375F oven for 25 to 30 minutes or until cakes test done. Cool cakes in pan on wire racks for 10 minutes. Then remove cakes from pans and cool them completely on the wire racks before filling. If using preserves, cut up any large pieces of fruit. Place one cake layer on a serving plate. Spread it with spreadable fruit or preserves. Top with the second layer. Place a lace doily, cutout pattern, or cardboard pattern on top of cake. Sift powdered sugar over top. Remove pattern.
