INGREDIENTS

1 cup unsalted butter, room temperature

1/2 cup light brown sugar, packed

1/2 cup dark brown sugar, packed (you can use light brown sugar if that is all you have)

1/2 cup white granulated sugar
•
1 tablespoon light corn syrup (optional--adds an extra softness to the cookies)
•
2 eggs, room temperature
•
2-1/2 teaspoons vanilla extract (I used VAIN Mexican Vanilla Extracted in Cane Rum)
•
1/4 teaspoon salt
•
1-1/2 cups all-purpose flour
•
1 teaspoon ground cinnamon
•
1/4 teaspoon ground nutmeg
•
1 teaspoon baking soda
•
1 teaspoon baking powder
•
1 cup quick cooking oats
•
1 cup old fashioned oats
•
MAPLE CINNAMON ICING:
•
2 cups powdered sugar
•
1 tablespoon maple extract
•
1/2 teaspoon ground cinnamon
•
2-3 tablespoons water
