"This oatmeal breakfast cake is easy, frugal and satisfying. It's also great to make ahead, and freezes beautifully...."

INGREDIENTS
3 cups flour
3 cups oats (old fashioned will give you more oaty texture, quick cooking dissolves into the batter more)
1 cup sugar
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup butter, melted
1/2 cup coconut oil, melted
1 1/2 cups buttermilk (you can make your own buttermilk by mixing white vinegar into regular milk...about a teaspoon of vinegar per cup of milk)
1 teaspoon vanilla
1-2 cups chocolate chips, blueberries, or other add ins
