1/2 cup crushed crackers (about 13 to 14 saltines) or oatmeal or breadcrumbs
1/4 cup milk
3 large eggs, separated
1 can (14-3/4 ounces) salmon, drained, bones and skin removed if desired
1/2 small onion, finely minced
3 tablespoons butter, melted
2 teaspoons lemon juice
2 teaspoons minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
lemon wedges for serving, optional
