1 (14-ounce) package Andouille sausage, sliced into half moons
4 chicken thighs (about 1 1/4 pounds total), bone-in and skin-on
1 tablespoon plus 1 teaspoon Cajun seasoning, divided
6 tablespoons all-purpose flour
1 green bell pepper, chopped
2 small celery stalks, chopped
1 large shallot, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
7 cups chicken broth
2 bay leaves
1/4 teaspoon smoked paprika, plus more, to taste
cayenne pepper, to taste
