4 corn tortillas, preferably at least a day old
1 1/2 cups cooked black-eyed peas, drained or 1 (15-ounce) can black-eyed peas, drained

2 jalapeños, seeded, stemmed, and diced
1/4 medium yellow onion, diced
2 cloves garlic, minced
1/4 cup chopped cilantro
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/2 tablespoon olive oil
1 tablespoon lime juice
8 large eggs
1/4 cup room temperature water
8 slices cooked bacon, crumbled
1 cup (4 ounces) shredded pepper jack
