INGREDIENTS
6 slices bacon, chopped (I used Nueske’s applewood smoked)
 1/2 small red onion, peeled and roughly chopped
2 pounds new potatoes, scrubbed and cut into bite-size pieces
Salt
1 tablespoon rice vinegar
Freshly ground black pepper
2 tablespoons finely chopped chives
3 cups baby arugula
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
5 tablespoons good olive oil
