Yields 3 to 4 cups of chile sauce

Ingredients

½ – 1 tsp. cumin / coriander spice mix*(to taste)
•
2 Tbsp. canola oil
•
1 medium onion, finely chopped
•
4 large cloves garlic, minced
•
2 Tbsp. flour
•
2 cups water or chicken stock
•
2 cups roasted, peeled, deseeded, and chopped green chile
•
1 tsp. dried oregano
•
½ tsp. salt or to taste
•
*If you only have powdered spices, then lightly toast them and add to the sauce.
