4 slices thick-cut bacon, sliced into 1/3-inch thick pieces

1/2 yellow onion, chopped

4 large red potatoes, diced

2 celery stalks, chopped
•
2 bay leaves
•
5 sprigs fresh thyme

2 Tbsp. butter
•
3 Tbsp. flour

2 and 1/2 cups reserved clam broth
•
1 cup milk (I use skim)
•
1 and 1/2 cups half-and-half
•
1/4 cup fresh parsley, chopped (optional, for garnish)
