INGREDIENTS

1 cup (2 sticks) unsalted butter, softened

1/2 cup sugar (if your fruit is very ripe and sweet, you may choose to use less sugar)

1/2 teaspoon baking powder

1/2 teaspoon kosher salt

1 large egg
•
1 teaspoon vanilla extract
•
1 cup all-purpose flour or whole wheat pastry flour
•
6 cups blueberries
•
6 cups nectarines
•
1 tablespoon lemon juice
•
1/3 cup water (I eliminate the water if I am using very ripe fruit)
•
1/3 cup sugar
•
1 teaspoon vanilla
•
1 tablespoon + 1 teaspoon flour
