INGREDIENTS

3 tablespoons vegetable oil, plus about 1 quart for frying

1/2 large onion, finely chopped
•
1/2 green bell pepper, finely chopped
•
1 celery rib, finely chopped
•
3 or 4 garlic cloves, minced

1 pound lean ground beef
•
1/2 pound ground pork
•
1 1/2 tablespoons all-purpose flour
•
1 1/2 teaspoons paprika
•
1 teaspoon dried thyme
•
1 teaspoon dried oregano
•
1/2 teaspoon salt, plus ground black pepper to taste
•
1 cup beef broth
•
1 tablespoon ketchup or Heinz chili sauce (see note below)
•
3 cups all-purpose flour
•
1 1/2 teaspoons salt
•
1 teaspoon baking powder
•
6 tablespoons Crisco, in several pieces
•
1 large egg
•
3/4 cup cold milk
