Ingredients: 3 tablespoons vegetable oil, plus about 1 quart for frying; 1/2 large onion, finely chopped; 1/2 green bell pepper, finely chopped; 1 celery rib, finely chopped; 3 or 4 garlic cloves, minced; 1 pound lean ground beef; 1/2 pound ground pork; 1 1/2 tablespoons all-purpose flour; 1 1/2 teaspoons paprika; 1 teaspoon dried thyme; 1 teaspoon dried oregano; 1/2 teaspoon salt, plus ground black pepper to taste; 1 cup beef broth; 1 tablespoon ketchup or Heinz chili sauce (see note below); 3 cups all-purpose flour; 1 1/2 teaspoons salt; 1 teaspoon baking powder; 6 tablespoons Crisco, in several pieces; 1 large egg; 3/4 cup cold milk
