INGREDIENTS
Salad
4 cups (1 L) packed kale leaves, torn, stems removed
1 radish, thinly sliced into rounds
1/2 large avocado, chopped
1/2 English cucumber, chopped
1/2 red pepper, chopped
1 celery stalk, chopped
1/2 medium red onion, chopped
Handful pomegranate seeds
1-2 Tbsp (15-30 mL) hemp seeds
Dressing
1 Tbsp (15 mL) hemp oil, flax oil or avocado oil (or extra virgin olive oil)
2 Tbsp (30 mL) fresh lemon juice
1 tsp (5 mL) pure maple syrup
Sea salt and cayenne pepper, to taste
