1/4 Cup apple sauce
4 Large eggs, room temperature
1 Tablespoon vanilla extract
3 Cups finely grated carrots, peeled about 4 large carrots
1/2 Cup unsalted butter, softened
8 oz cream cheese, softened
1 Teaspoon vanilla extract
4 Cups powdered sugar
1 Cup Crushed Pecans, optional
