INGREDIENTS
1/2 cup Dijon mustard
1/2 cup buttermilk
4 bone-in, skin-on chicken thighs
4 bone-in, skin-on chicken drumsticks
4 garlic cloves
1 tablespoon fresh thyme leaves
Zest of one lemon
1 tsp. salt
1 tsp. black pepper
2 cups breadcrumbs (see my note below)
1/4 cup extra-virgin olive oil
