* approx 900g Mushrooms, thinly sliced

* 4 Tbsp cooking oil

* 2 Large onions, peeled and chopped

* 2 Cloves garlic, finely chopped

* 4 Heaped tbsp plain flour
•
* 1.8 litres water (or chicken stock if you prefer)

* 2 Bay leaves
•
* Handful of fresh parsley, finely chopped

* Salt and Pepper to taste

* A sprig of fresh Thyme (leaves only) finely chopped – optional
