6 ounces small cremini or button mushrooms ( sliced)
1 small shallot ( minced)
1 clove garlic ( minced)
2 teaspoons fresh thyme leaves
⅓ cup dry white wine (or dry red wine)
1 cup beef stock ( or chicken stock)
½ teaspoon cornstarch
2 teaspoons Dijon mustard
1 tablespoon Worcestershire sauce
2 tablespoons heavy cream
salt and pepper to taste
