INGREDIENTS

2 1/4 cups chicken broth

4 sprigs fresh thyme
•
1 bay leaf
•
1 tablespoon olive oil
•
3 large leeks (white and light green parts), cleaned
•
3 cloves garlic, chopped
•
6 ounces mushrooms (combination of white mushroom and crimini mushrooms), sliced

1/2 cup plus 2 tablespoons arborio rice
•
1/4 cup dry white wine (I used dry Vermouth)
