INGREDIENTS
1 cup water
1/2 cup pearl barley
Salt
2 tablespoons olive oil
1 onion, finely chopped
2 carrots, cut into 1-inch pieces
4 ounces brown mushrooms, quartered or sliced
1/4 cup dry white wine
3 tablespoons flour
1/2 teaspoon dried thyme
4 cups vegetable broth
1 can (15 ounces) white beans such as great Northern, drained well
Ground pepper to taste
2 sheets refrigerated pie dough (one 14-ounce package)
