The marshmallows are a revised version of this practically instant-setting marshmallow recipe from Peeps Week '09. It allows just enough time for the graham sandwiches to be made before the marshmallows set. You'll need space in your fridge for one or two wire cooling racks covered with cookies. If graham flour isn't readily available to you, you can substitute whole wheat flour...."

INGREDIENTS
For the Graham Crackers
2 cups all-purpose flour
1 cup graham flour
3/4 cup tightly packed dark brown sugar
1/2 teaspoon baking soda
5 tablespoons unsalted butter, cold, cubed
1/4 cup honey
1/4 cup whole milk
1 tablespoon vanilla extract
 
For the Marshmallow Filling
1 packet of unflavored gelatin (2 1/2 teaspoons)
1/3 cup cold water, for gelatin, plus 1/4 cup for syrup
1 cup sugar
1 teaspoon vanilla extract
 
For the Chocolate Coating
16 ounces dark chocolate (I used 72% cacao)
