Moo Shu Pork

INGREDIENTS
3/4lb pork shoulder, sliced thinly across the grain
3Tbsp shao hsing rice wine(Shaohsing) - OR -
sherry
1/8cup cornstarch
1Tbsp soy sauce
1Tbsp oyster sauce
1Tbsp shao hsing rice wine(Shaosing)
2Tbsp oyster sauce
3Tbsp soy sauce
2Tbsp sugar
1tsp ginger root(minced or grated)
3cloves garlic, minced
4 green onions, thinly sliced (one for garnish)
1pint shiitake mushrooms, stems removed and sliced thinly
1pint napa cabbage, sliced
1 1/2cups wood ear mushrooms, sliced
1cup bamboo shoots(strips)
3 eggs, scrambled
