INGREDIENTS
¾ cup unsalted butter, divided
½ pound tasso, roughly chopped
1 cup diced white onion
4 cloves garlic, thinly sliced
1 cup diced red bell pepper
¾ cup finely chopped green onion, plus more to taste
2 teaspoons Cajun seasoning
Ground black pepper, to taste
16 ounces fettuccini noodles
2 pounds peeled and deveined large fresh shrimp
1 cup freshly finely grated Parmesan cheese
1 tablespoon chopped fresh parsley
Juice of 1 lemon
Garnish: sliced green onion, shredded Parmesan cheese
