INGREDIENTS
***For the peanut sauce:***
1/3 cup natural peanut butter
3 tablespoons fresh lime juice
2 tablespoons honey
1 tablespoon low-sodium soy sauce
1 teaspoon sriracha
1/2 teaspoon fish sauce, optional
1 teaspoon fresh ginger, grated
1/2 teaspoon garlic, grated
3 tablespoons hot water
salt, to taste
***For the bowls:***
1 (8.8-ounce) package rice noodles
olive oil, to taste
1 pound shrimp, peeled and deveined
salt, to taste
black pepper, to taste
1 avocado, sliced
1 cup carrots, shredded
1 red bell pepper, thinly sliced
1 cup cucumber, sliced into ribbons
1 cup red cabbage, thinly sliced
1 jalapeño, thinly sliced
***Optional toppings:***
green onions, to taste, chopped
black sesame seeds, to taste
