INGREDIENTS
Makes 4 servings
This blend of Mexican mole sauce and pulled pork tenderloin makes for a crazy delicious sandwich. The filling also would be good tossed with warm noodles.
1 tbsp (15 mL) olive oil
1 lb (450 g) pork tenderloin, cut into 2-inch (5-cm) chunks
½ cup (125 mL) smooth almond butter
½ cup (125 mL) canned crushed tomatoes
3 cloves garlic
1 shallot
½ tbsp (7 mL) cocoa powder
¼ tsp (1 mL) cinnamon
¼ tsp (1 mL) ground black pepper
¼ tsp (1 mL) red pepper flakes
1/8 tsp (0.5 mL) ground cloves
1 cup (250 mL) water
Salt
4 sesame seed burger buns
1 green onion, white and green parts, chopped
