1 teaspoon vanilla
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 ½ teaspoon cinnamon
3 cups finely grated carrots (6-8 carrots)
1 ½ cup nuts (optional)
1 cup raisins (optional)
Lemon Cream Cheese Topping:
¼ cup butter
8 oz cream cheese
1-2 cups powdered sugar
zest of 1 lemon
juice of ½ a lemon
